Roast Chicken

Ingredients

  • 1 whole chicken (about 1.5 to 2 kg)
  • 2 tablespoons of olive oil
  • 2 tablespoons of softened butter
  • 2 garlic cloves, crushed
  • 1 tablespoon of lemon juice
  • 1 teaspoon of paprika
  • 1 teaspoon of dried thyme
  • Salt and black pepper to taste

Roast Chicken

Instructions :

  1. Preheat the oven to 200°C (400°F).
  2. Rinse the chicken with cold water, then pat it dry with paper towels.
  3. In a bowl, mix the softened butter, olive oil, crushed garlic, lemon juice, paprika, dried thyme, salt, and pepper to form a paste.
  4. Place the chicken in a roasting dish and generously brush it with the spice paste over the entire surface, making sure to also coat the inside of the chicken cavity.
  5. If desired, you can add chopped vegetables around the chicken, such as carrots, potatoes, or onions to roast alongside.
  6. Place the dish in the oven and roast the chicken for about 1 hour and 30 minutes to 2 hours, depending on the size of the chicken. Cooking time may vary, so check the doneness by inserting a meat thermometer into the thickest part of the thigh. The internal temperature should reach 75°C (165°F)..
  7. Midway through cooking, baste the chicken with its cooking juices to keep it moist and give it a beautiful golden color.
  8. Once cooked, remove the chicken from the oven and let it rest for a few minutes before carving.
  9. Serve the roast chicken with the roasted vegetables and accompany it with sauces or side dishes of your choice.
