Chicken Tagine with Olives and Preserved Lemons

Ingredients

  • 1 chicken, cut into pieces
  • 2 onions, minced
  • 3 garlic cloves, crushed
  • 2 tablespoons of olive oil
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground ginger
  • 1 teaspoon of paprika
  • 1 teaspoon of ground cumin
  • 1 teaspoon of cinnamon
  • Salt and black pepper to taste
  • 1 bunch of fresh cilantro, chopped
  • 1 bunch of fresh parsley, chopped
  • 1 preserved lemon, cut into quarters
  • 100g pitted green olives
  • Juice of 1/2 fresh lemon
  • Water

Chicken Tagine with Olives and Preserved Lemons

Instructions :

  1. In a large tagine or a Dutch oven, heat the olive oil over medium heat. Add the minced onions and sauté until they become translucent.
  2. Add the crushed garlic, turmeric, ginger, paprika, cumin, cinnamon, salt, and black pepper. Mix well.
  3. Add the chicken pieces and brown them on all sides for a few minutes.
  4. Add the chopped fresh cilantro and parsley, along with the preserved lemon quarters. Gently mix to coat the chicken pieces with the spices and herbs.
  5. Add enough water to cover the chicken pieces. Reduce the heat to low, cover, and simmer for about 45 minutes to 1 hour, or until the chicken is tender and fully cooked.
